Persimmon Salad – 4 Credits Total

2-3 Persimmons peeled & cut into strips

1 orange cut into pieces

Shredded lettuce

Combine above ingredients & pour over the following dressing:

1T vinegar

1T honey

½T lemon juice

Sprinkling of allspice.

Beetroot Salad – Serves 8 Half Credit Each

4–5 beets raw, peeled and grated

1 carrot, grated

2 apples, grated

2Traisins

Mix the above and add juice of 2 oranges
